The class begins with learning to make vegetarian ravioli in sage butter sauce as an appetizer, followed by crafting homemade spaghetti with a rich tomato sauce and pork meatballs from Bay Area farmers. Chef Eddie shares techniques passed down from Italian chefs and his own grandmother's hand-cut noodle methods. The session includes making pasta dough by hand, shaping different pasta varieties, and preparing complementary sauces. Participants will develop practical culinary skills including proper dough kneading techniques, pasta shaping methods, and sauce preparation.
